Therapy minda

hari ini makcik bermain kat taman..berjalan jalan kat batuan ini..waduh waduh...sakit nyer kaki makcik..berjalan pon slow slow..ala ala orang baru lepas bersalin. dah lama tak berpijak kat batu batu camgini. makcik cuma dapat 3 round. im proud of myself..at least selepas therapy ini..terasa lega jer badan. bukan hanya badan tapi fikiran pun rasa ringan..more relaxing.  no wonder orang cina suka berjalan atas batu camgini.

orang tua ini berjalan laju jer. masa makcik tegor dia , dia dah selesai kan 10 round. kagum sungguh makcik dengan orang tua ini. sempat lagi dia bagi semangat kat makcik...jalan slow slow tapi jangan berhenti...itu kata nya.

Pan orang Malas

 photo a9444b35_zpsa6aa3a7a.jpgmotip tunjuk pan ini...nak bagi taw nih lah pan yang memudahkan makcik memasak sekarang...dah lama ada benda alah ini tapi akibat malas nak masak sekarang nih makcik taruh semua dalam satu pan and let it cook for 15 minute or so untuk ayam atau daging.. sangat mudah dan sangat practical .

ok...ini adalah ubi kayu tanaman  mak yang paling sedap... lepas rebus  makcik taruh dalam pan ini . letak sikit lada putih serbuk dan sedikit minyak makan..biarkan dalam 8 minute untuk setiap bahagian pan ini.. sedia untuk di hidangkan. makan ngan sos ker ...makan sebagai ganti nasi ker...
besides that kalau masak steak lagi lah senang...ohh steak...tetiba  teringin nak makan steak lah pulak

Lokan Bakar

sebenarnya teruja nak merasa keenakan lokan bakar . Bila Pia kata dia makan lokan bakar makcik rasa teringin nak mencicip tapi tekak nih sebenarnya craving for oyster...u know..oyster just perah with lemon..huhuhuhu...kan beshhhh..

BAKED PEACH YOGURT CHEESE CAKE

assalamualaikum..macam lama jer tak hapdate site makcik nih..sebenarnya angin kemalasan melanda..lagi lah dengan budak budak yang ada kat rumah dan dengan line yang tak semengah . oh ya...tadi kan masa makan tembikai boleh plak tersedak sedak..agak agak ada yang rindu tak...kekekeke..jom kita buat kek cheese plak. actually kek ini makcik buat time raya haji lepas..cuma tak kesempatan nak menempek kat sini. Please enjoy it sebab ia sangat sedap.

BAKED PEACH YOGURT CHEESE CAKE – credit alex goh

SPONGE CAKE

A)
160gm sugar
15gm ovallate

B)
5 eggs
125gm flour
1 tsp baking powder

C)
40ml water

D)
75g melted butter
1 tsp vanilla

Method:-
POUR A INTO THE MIXING BOWL AND MIX WELL
ADD B AND WHIP TILL THICK
STIR IN C IN B
WHIP THE BATTER TILL LIGHT AND FLUFFY
PUT IN D AND MIX WELL BLENDED. POUR IN 9” SQUARE PAN AND BAKE FOR 30 MINUTE OR TILL COOK AT 180 C. WHEN BAKED REMOVE CAKE IMMEDIATELY FROM PAN
For chocolate sponge cake – mix 2 tbsp of cocoa powder with 40ml of water to form a paste. Then add it into the cake batter. Mix till well blended


FILLING: ( cream cheese filling)

A)
500GM CREAM CHEESE
50G SUGAR
50G BUTTER

B)
50G FLOUR

C)
1 EGG
3 EGG YOLKS

D) 150G YOGURT

E)
3 EGG WHITES
70G SUGAR
PINCH OF SALT

F)
300GM PEACHES CUT INTO SLICES

METHOD:-
CREAM A TILL LIGHT AND FLUFFY
ADD B AND MIX TILL WELL BLENDED
ADD C AND CREAM TILL SMOOTH
ADD D AND MIX TILL WELL COMBINED
WHIP E TILL STIFF. MIX WITH THE ABOVE BATTER TILL WELL INCORPORATED.

PLACE THE THIN LAYER OF VANILLA SPONGE CAKE INTO A 9 SQUARE PAN THEN PLACE THE PEACH SLICES ON TOP.
POUR THE CHEESE BATTER ON TOP. BAKE AT 160c IN WATER BATH FOR 60 MINUTES. SERVE.

You can substitute peaches with blueberry or kiwi or passionfruit. (am addicted with passion fruit filling  )

Sayanggg Bapa

Ketika di perkuburan pagi ini dan ketika talkin di baca..berbagai persoalan dan rasa bermain dalam hati makcik. Perasaan yang sentiasa hadir jika dalam suasana yang begitu menginsafkan. Insaf melihat anak anak yang tidak “faham” . Yang glamer…cantek..tapi aduh… (bila dah mengejar duniawi dan akhirat di ambil mudah – yang dalam kelas tersendiri..tapi..%^$) sungguh kesian.

Betul lah apa yang jadi kemegahan kita hari ini tidak memberi erti untuk kita bila kita meninggal. Yang kita bawa Cuma amalan dan amal jariah kita untuk menghadap illahi. Semua yang ada adalah hak ALLAH. Dari NYA kita datang kepada NYA kita kembali.

Sering kita lalai..sering kita alpa untuk apa yang kita kejarkan di dunia sehingga kita hanya menjalani apa yang menjadi wajib saja. Sering kita bermegah untuk kehidupan yang mewah..tapi itu tak menjamin kesenangan kita di akhirat nanti.

Wahai yang alpa dan mudah lupa  ~ kejar lah dunia..kejar lah apa yang di namakan cinta , kejarlah untuk apa yang di nama kan nafsu , kejar lah untuk rasa yang ada didalam hati atas rasa sedih seorang insan lain.

Tapi ingat lah..bila kita hanya jasad yang kaku terbaring, kita tinggalkan banyak persoalan dalam hidup, yang baik di kenang, yang menjadi kisah sedih dan buruk juga akan di kenang. Selama mana kita hidup di dunia ini..esok lusa kita akan di ambil. Cara mana dan bagaimana akan menjadi persoalan kita yang hidup. kalau yang senang dan tak menyusahkan  alhamdulilah.
Jika tiba waktu makcik, makcik berharap di ambil tanpa menyusahkan sesiapa. biarlah makcik pergi dalam tido atau selepas subuh hari jumaat agar dapat di kerjakan terus dan tidak berlengah lengah..tak perlulah bermalam di rumah kerana akan menyusahkan anak anak saja tapi siapa kah kita untuk minta bermacam macam kalau amalan tak sehebat ulamak.  Tapi adakah  yang kenang kan dan sedekah kan al-fatihah pada makcik? makcik bukan siapa siapa..

kata kuda putih bertanduk itu, Allah sentiasa uji makcik kerana DIA tak nak makcik lupakan DIA. Doalah untuk kebaikan hidup di dunia dan di akhirat dan di kelilingi dengan limpahan kasih sayang yang bernama keluarga dan anak anak. dan dia kata berdoalah ketika hari hujan ..kerana langit terbuka luas dan ALLAH makbulkan permintaan  kita.. itu kata kuda putih bertanduk. kata dia, dengar lah lagu maher zain untuk kuat kan semangat.. for the rest of my life.
Hari semalam adalah pelajaran untuk makcik. dan pengalaman yang lepas lepas adalah guru yang paling baik untuk makcik melangkah dengan hati hati untuk hari esok.


kata orang..kalau kita ikhlas pun orang kata kita dengki dan berniat jahat, tak usah lah bermain api. Hati kita niat kita kalau orang dah tak suka tetap di pandang serong . Pada makcik * untuk jatuh pada lubang yang sama , mengalami benda yang sama berulang kali dan mendapat penghinaan yang sama berulang kali adalah suatu kebodohan yang sangat sangat ." Belajar dari pengalaman ~ this is not the end of the world*

p/s: pagi tadi bapa dah tak marah..ehh…makcik cakap..jgn lah marah..i dah admit my mistake..makcik Tanya naper bapa selalu marah marah sekarang..ker dah menopause..hehehehe..makcik kata..bapa kena amik pill hormone., kata makcik lagi..ALLAH bagi umur bapa 10 tahun sekarang tinggal 5 tahun sebab selalu marah marah..dah nampak tua 10 tahun..kedut kedut muka terserlah..tak hensem lagi...bapa sengih jer..kan…makcik kan anak bapa. Sayanggggggggg bapa.

KERANA MULUT

Hari yang agak sibuk – driving here and there.

Pagi- bawa mak dan archie pergi berurut setelah mendapat tahu tentang seorang pakcik yang pakar buang angin dalam urat.. alhamdulilah lega rasanya

Petang – bawa bapa dan dillah pergi tempat yang sama..in the process of healing

Semasa nak balik rumah dapat khabar dari sjn rohani , pakcik sarbini telah meninggal dunia dalam kol 4.30 petang tadi. Instead balik ke rumah kita terus ke rumah arwah. As usual bapa sibuk dengan jenazah, makcik plak lepak kat luar – berborak dengan hj mohammad.. that time semua macam kelam kabut sikit..dia kata arwah mungkin choking selepas minum sebab tertelan gigi palsu nya. That time ada ambulance kat rumah..so hj mohammad kata maybe ambulan nak bawa mayat ke hospital..jadi kes polis.. kena post mortem..bla bla bla…memang banyak procedure lah .. itu lah yang makcik digest sebelum pamitan untuk masuk ke dalam rumah untuk bertemu dengan isteri arwah..

Setelah ucapan takziah n the usual thingy…makcik tanya dia arwah sakit apa..dia kata tak ada sakit..tapi dia ada sejarah darah tinggi . setelah minum dia pengsan dan dia (isteri arwah) perasan gigi dia tak ada. Sebelum kejadian tu mereka berdua baru jer balik dari shopping barang dapur. Then kebetulan nurse yang datang tanya isteri arwah kalau kalau nak bawa jenazah pergi hospital. I explained to her the procedure..kena itu ini…isteri arwah cakap …tak payah bawa hospital lagi. Lepas bapa uruskan jenazah, urut dan atur kedudukan mayat kita pon pulang, on the way balik tu banyak lah pit stop..nak beritau kabar sedih dengan jiran yang tak tahu, almaklum lah kan duduk kat kampong..

Until hjh ramlah (arwah nyer anak saudara) call me back because before this makcik try called dia tapi tak berjawab..makcik cakap pakcik sarbini dah tak ada..dah meninggal tetelan gigi… (hey…where the sun ..i get that idea..) padahal dalam fikiran makcik was thinking about arwah ..as a good person and still digest apa yang makcik dapat mula mula datang ke rumah arwah. Masa call tu..makcik tengah driving.. my father was beside me..terus my father mengamuk makcik tahap tak henggat dunia..dia membebel macam macam..dia kata itu sebagai fitnah.kalau hjh ramlah sampai kan kat orang berita kematian macam itu..boleh jadi fitnah..and makcik tanggung dosa..time tu makcik try pertahan diri..mak makcik pun try bela makcik..tapi bapa emosi sungguh…tak boleh cakap macam tu..bla bla bla… .makcik ingat fitnah jer..

Dah tengok dier sungguh emosi …(yelah kan..bapa baru jer kehilangan kawan). makcik diam..lepas mandi makcik call hjh ramlah balik..nak perbetulkan keadaan..yes, cakap bapa memang betul…..laju nyer dia dah sampaikan berita pada adik beradik dia menyata kan arwah meninggal kerana tertelan gigi..(padahal berita itu tak berapa sahih. I was told by hj mohammad and isteri arwah plak perasaan gigi dia tak ada - dan itu tak boleh di jadikan sebab dia meninggal - my bapa bising part itu. dia betul betul marah dengan makcik) rasa bersalah lah plak..especially bila dillah yang tak banyak bercakap menyampuk.. naper mama cakap macam itu.. adus...terasa kesal plak di hati.

Kat sini memang dah timbul isu, I have to explained to hjh ramlah berita yang makcik sampaikan itu.. then I insist her to call who ever yang dia dah cakap ..tentang kematian tertelan gigi tu..makcik betul betul minta maaf.  

Kerana mulut..satu ayat boleh jadi satu isu....makcik rasa bersalah teramat..rasa berdosa plak kerana baru jer bawa berita yang tak sahih yang berunsur fitnah..(kata bapa)

AL-fatihah buat pakcik sarbini. semoga ALLAH mencucuri rahmat keatas roh arwah , AMIN

seminggu yang penuh kontroversi, ala ala tempat meluah perasaan, ala ala tempat kaunseling, ala ala tempat bermanja tapi semua nya ibarat pentas dunia..lakonan mantoppppp!

Rasa seorang DHia
Kata Dhia Rasa itu perlahan lahan melayu. DHia kata Ibarat pokok pokok bunga yang makcik siram seminggu sekali. Kalau mak tak siram ..memang confirm menjadi bunga kering. DHia pandang orang itu tapi pandangan itu sebenarnya kosong. Telah lama kosong sebenarnya. Jiwa rasa itu telah beku.. Hati orang itu , rasa orang itu bukan untuk DHia dan keluarga lagi.

Sebagai teman sebantal malang sekali DHia tidak tahu apa apa..oh ya..prosedure sebenar, do not monitor my phone call, don’t bother my life, don’t ask anything ~ yes..dah lama rasanya agreement ini  Cuma DHia terkadang terlalai.. alpa mungkin. Itu lah antara sebab DHia malas nak berkomunikasi, malas nak bercakap kerana dalam cakap itu sebenarnya menutup benda yang nyata. Lakonan mantap meski sebenarnya ada hati yang terluka , ada jiwa yang terguris. Betullah..silence is the best medicine.

kata DHia, kalau boleh DHia tak nak mengulangi benda yang telah lama menghantui DHia pun begitu satu hari jika terpaksa , DHia reda.DHia sedih kerana DHia bukan dalam senarai orang yang di hargai. Dhia sedih kerana saat itu hampir tiba.!

Bergaduh bersumpah seranah dengan seorang bapa. Hurmmm makcik Cuma boleh beristifar , minta di jauh dari anak anak dan keturunan makcik

Gaduh adik beradik – marah macam mana pun – air di tetak tak kan putus. makcik cuma mampu tersenyum takut salah kata - makcik plak kena serang

Rasa seorang isteri
Dah 3 kali peluang di beri – elok ku ikut jantan lain..
Apo nak dikato…


Rasa seorang ibu
Untuk anak anak , buat terbaik untuk diri sendiri, sayang seorang teman lelaki , sayang seorang teman wanita tak seperti kasih sayang seorang ibu untuk anak anak. Kasih sayang ibu tak pernah luntur, tak pernah melayu tak pernah pudar. kasih sayang seorang ibu akan di bawa sampai mati ..walau pernah rasa tersinggung , walau pernah merajuk, walau pernah di lukai..dalam doa..sentiasa mengharapkan anak anak menjadi yang terbaik. Dan seorang ibu tak pernah berpaling tadah dengan anak anak.
menoleh ke belakang , makcik ~ sayang mak makcik kerana mak tak pernah mahu melihat makcik sengsara..makcik tahu itu.

Chocolate

hari ini misi membuat coklat..untuk hari raya adil adha..makcik kena ready goodies since dielz dah bagi tau nak ajak kawan kawan ke rumah.

here the resipi - lebih kurang ler iyer

dark chocolate - 150gm
milk chocolate - 300 gm
orange oil/stawberry oil atau apa apa perisa yang di gemari

double boil - jgn kena air

Tips for cooking our chocolate recipes
•The room should be from 60 to 70 degrees F, if possible
•Melt chocolate on the lowest setting (do not overheat the chocolate)
•If chocolate is too thick after melting, add small amount of Crisco
Chocolate if properly wrapped, may be kept in freezer for 6 months. Frozen chocolates should stand at least 8 hours at room temp before unwrapping
•Refrigerated chocolates should stand at room temp for at least 2 hours before unwrapping

•One lb of melted chocolate will cover 2 to 2 1/2 lbs of centers, depending on type of centers and thickness of chocolate
•You can change the color of your chocolate by adding paste food colors (Do not put liquid colors in your chocolate)
•Chocolate can be used for coating: nuts, raisins, dates, caramels, pretzels, chow mein noodles, rice crispies, coconut, candied fruit, peanuts, marshmallows (cut in half), or anything you like
•You can add oil flavoring to melted chocolate if you want to flavor the chocolate. For French mints, add peppermint oil to white chocolate; put in a candy mold, then add a thin layer of milk chocolate
Chocolate may also be stored at room temp, 75 degrees, or lower, for many months, if well wrapped. During hot weather, it can be refrigerated, but must be well wrapped to prevent absorbing foreign odors and dampness

what you will need
Large bar of chocolate (white or milk)
Cookie sheet or mold (most waterproof containers make suitable molds)
Decorative goodies such as nuts, dried fruits and candies

How to make it
1.Line a cookie tray, oven pan or mold with some baking parchment; I've used a thin plastic tray that came out of a pack of cookies for the cranberry and nut one.

2.Break the chocolate in to small chunks and place in the microwave for about one minute or until the chocolate has almost melted, give the chocolate a stir to help any remaining chunks melt, this will help the chocolate to melt without making it to runny and thin. Any more remaining chunks will need another blitz in the microwave.

3.If your chocolate is fairly thin and quite runny leave it to thicken slightly before pouring it on to the cookie sheet, it doesn't need to be a perfect shape as this can often make it more interesting and unique.

4.Then place the chocolate sheet into the refrigerator

5.Once the homemade chocolate has began to set but still feels soft and sticky remove it from the refrigerator and decorate the chocolate with your favourite treats pressing them into the surface of the chocolate to secure them.

6.When you're happy with the way your homemade chocolate looks pop it back into the refrigerator until it has hardened.

Giving as a gift?
Unless you intend to put your homemade chocolate recipe into a box or leave it in the mold, you may need to support the bottom of the chocolate with a piece of card to stop it from breaking, before covering with plastic wrap and decorating it with a ribbon.
Homemade Chocolate Peanut Butter Cups

Ingredients
1 cup peanut butter
1/4 teaspoon salt
1/2 cup powdered sugar
12 oz milk chocolate

Method

1.Break up the chocolate and place it in a heat proof bowl and then melt it in the microwave for about a minute or until fully melted, or melt in the top half of a double boiler.

2.Line a muffin tray with paper candy cups and cover the bottom of each cup with chocolate. Spread some more chocolate up the sides of each cup with a small paint brush. Leave these aside to set while you make the peanut butter filling.

3.In a small bowl, mix together the peanut butter, salt and powdered sugar. Keep stirring the mixture until it becomes firm.

4.Spoon some of the peanut butter mix into each cup and chill until it hardens. You may need to melt the chocolate again at this point so you can pour the remaining chocolate over the top of the peanut butter to form a lid.

Homemade Block Chocolate Recipe From Scratch
Please note that this homemade chocolate recipe does lack that silky smooth texture of a store bought block chocolate, and the taste isn't quite as good. In my opinion it's more of a solid fudge than a chocolate.
But from our research it seems to be one of the better homemade chocolate recipes around and we could not find anything better, so give it a try and you can be the judge...

Ingredients
4 1/2 oz (125g) vegetable shortening (Copha or solidified coconut oil work fine)
4 1/2 oz (125g) confectioner's sugar (pure icing sugar)
6 tablespoons cocoa powder
4 tablespoons powdered milk
Pinch of salt

Method
1.Line a square cake pan with grease proof paper.

2.In a small saucepan, melt the vegetable shortening over a low heat. Sift the icing sugar, cocoa powder, powdered milk and salt into a bowl. Pour the melted shortening into the sugar mixture and mix until it becomes smooth and thick.

3.Pour chocolate mixture into the prepared cake pan and flatten out the top using a spatula or the back of a spoon.

Use a skewer or the blunt side of a knife to press indent marks into the chocolate while it's still soft. This will help you to break your chocolate into nice squares once it's hardened and set.

Homemade Chocolate Candy Bars
If you can find candy bar molds in confectionary stores and craft stores, then making your own homemade candy bars will quickly become a favorite in your home. The recipe below is for chocolate caramel candy bars.

Ingredients
10 oz (280g) chocolate
1/4 cup chopped cashews
1/2 cup soft caramel candies from the store
1 tablespoon cream
1 tablespoon water

Method
1.Clean and dry your plastic mold thoroughly before you begin.

2.Melt the chocolate in a double boiler and then pour melted chocolate into the molds. Be sure the chocolate coats the bottom and sides of each cavity. Pour out the excess chocolate and clean the top of the mold. Leave chocolate in the fridge to set.

3.Unwrap the caramel candies and place them in a microwave-safe bowl with water and cream. Microwave them on high for 1 minute. Stir well, then microwave again for 30 seconds. Stir again. If caramels aren't melted completely, you can give them another quick blast in the microwave. You want the caramel to be smooth and liquid.

4.Spoon the caramel mixture into the hardened chocolate molds. Don't fill them to the top. You only want to fill each bar about 2/3 full with caramel. Sprinkle chopped cashews over the top of the caramel to almost the top of the mold. Remember, you still need to add a layer of chocolate, so don't fill the mold completely.

5.You might need to re-melt the remaining chocolate at this stage. Pour over the molds to form a lid. Scrape the top of the molds flat with a spatula or a knife and then return to the fridge until they're set completely.

6.Once the chocolate has hardened properly, remove your candy bars from the molds and store in air tight containers.

Yogurt

800 ml fresh milk - di masak - mendidih - suam
1 botol kecil low fat natural yogurt ( low or high) terpulang pada cita rasa

 campurkan yogurt tu dalam bekas khas buat yogurt macam dalam gambar tu.  dlm bekas tu nanti masuk plak air panas mendidih. dan tutup bekas - biar semalaman kat luar.dah menjadi yogurt tu masuk lam peti sejuk.

Homemade Yogurt


Bahan-bahan :

1 quartz susu
1/4 cawan yogurt perisa asli (starter)
3/4 cawan susu tepung tanpa lemak


Cara Membuatnya :
1. Satukan susu dan susu tepung dalam periuk. Panaskan ke suhu 100 - 150 darjah F.
2. Apabila ia hampir mendidih, angkat dari api dan sejukkan dalam bekas berisi air sejuk atau air batu.
3. Satukan air susu tadi dan yogurt perisa asli. Yogurt starter ini boleh beli yang readymade di pasaraya. Ia berperanan sebagai ibu yogurt kerana telah ada bakteria didalamnya. Ia akan membiak dalam susu yang baru itu.
4. Tuang campuran itu dalam bekas tupperware atau periuk yang bersih dan simpan di tempat yang hangat bersuhu 115 darjah F selama 6 jam atau lebih. Anda juga boleh menyimpannya dalam oven.Caranya ialah panaskan oven ke suhu 275 darjah F dan padamkan apinya.Masukkan periuk kedalamnya dan biarkan ia disitu beberapa jam.
5. Setelah yogurt menjadi pekat, bolehlah disimpan di dalam peti sejuk

Bahan-bahan ( untuk seluruh keluarga )

susu segar 1 liter
plain yogurt(beli kat supermarket) 2 sudu besar

Cara-cara
1.Masukkan susu segar kedalam periuk.
2.Panaskan sehingga lebihkurang 40 darjah celcius.
3.Masukkan plain yogurt.(1 sudu besar bagi setiap 500 ml. jadi kalau 1 liter tu letak 2 sudu besar la.) kacau sebati.
4.Pindahkan kedalam bekas yang boleh ditutup rapat.
5.Simpan ditempat yang suam untuk keep suhu 40C seperti oven, thermos, kotatsu ataupun balut dengan kain gebar tebal selama 8 jam.
6.Bila dah siap boleh lah disimpan dalam peti sejuk, siap untuk dimakan.
 
7.# ulangi setiap hari pun boleh dengan mengambil yogurt yang dah dibuat tu sebagai benih. lama kelamaan rasa masamnya akan hilang(lebih kurang sebulan), beli yogurt baru sebagai benih baru.
 
8.# segala peralatan yang hendak digunakan elok dibasuh bersih dahulu dengan air panas mendidih untuk mengelakkan germ yang tak diingini masuk kedalam yogurt tadi.

RENDANG

Macam mana rasa pucuk ubi kayu masak rendang ? ternyata usaha petang tadi meredah kebun mak tak sia sia. 1st time makan dan anak tekak pon bleh terima.

Nasib baik mak ada bercucuk tanam ubi kayu, senang jer nak dapat..bila bila masa dan ketika. My mother hyper aktive.. tak boleh nak duduk diam, kalau setengah hari tu terbaring kat sofa makna nya tak sihat ler tu dan makcik mengaku memang tak leh nak tandingi sifat dan sikap mak yang tabah, kuat bekerja dan rajin berkebun sayur dan bunga.. nih anak dia nih kan…just tunggu depan pintu mak antar hasil tani  , pendek kata serba serbi mak , anak dia yang sorang ini tak leh nak tandingi.. spoil kan.. dan mak tetap mak…kalau anak dia nih malas nak masak..just berlari jer kat rumah mak..segala dah terhidang. Dan mak tak pernah cakap susah…tak pernah kata tidak.. itu lah mak.. sayang mak. Hanya doa untuk kebahagiaan dan kesihatan mak yang makcik mampu buat ketika ini. kalau lah makcik ada semua nya..atau mampu adakan semuanya untuk mak..akan makcik berikan apa saja kehendak mak..tapi kan...siapa lah makcik ini..

Rendang ayam campak campak nih pon makcik buat petang tadi..anak anak komplen makcik lama dah tak masuk dapur masak masak.. asik nak masak kek jer kata mereka. So dinner malam ini agak heavy..semua bersantan.. mau tak bertambah lemak lemak makcik kat badan nih. apa apa pun macam menyesal ler plak lepas makan..dah makan tak henggat...lepas tu asyik ler salah kan diri sebab makan bertambah tambah.

WHITE CHOCOLATE MUD CAKE

300g white chocolate
200g butter
250ml (1 cup) milk
165g (3/4 cup) caster sugar
2 teaspoons (10ml) vanilla extract
2 large eggs GRADE A , lightly beaten
100g (2/3 cup) self-raising flour
150g (1 cup) plain flour

Sour Cream and White Chocolate Ganache
200g white chocolate
88g sour cream


Preheat oven to 160 degrees Celsius (145 degrees Celsius fan-forced).
Grease a 20cm square cake pan and line the base and sides of the pan with baking paper.
Place chocolate, butter, milk and sugar in a large saucepan over low heat, stirring frequently. Remove from heat when chocolate and butter have melted, and stir mixture until completely smooth. Allow mixture to cool at room temperature for 15 minutes.
Add vanilla and eggs to chocolate mixture and stir until well combined. ©
Stir flours together in a large bowl. Add one cup of chocolate mixture to the flour and stir until a smooth paste forms.

Repeat with another cup of the chocolate mixture.
Add remaining chocolate mixture and stir until mixture is smooth. This gradual method of combining the wet and dry ingredients helps prevent lumps. Pour mixture into prepared pan.
Bake for about 1 hour 10 minutes to 1 hour 20 minutes. When the cake is ready, a fine-bladed knife inserted into the centre of the cake should come out without any batter attached.

Loosely cover cake with greaseproof paper or a clean tea towel and allow it to cool to room temperature in pan.The cooled cake can be iced with the white chocolate ganache immediately, or stored and then iced on the day of serving.
Store cake in an airtight container in the refrigerator and bring to room temperature before serving. The cake is suitable to freeze iced or uniced.

Sour Cream and White Chocolate Ganache
Melt white chocolate in a small saucepan over very low heat, stirring frequently. When chocolate has completely melted, remove from heat and quickly stir in sour cream. Use immediately, or if your ganache is quite runny, set it aside at room temperature to thicken slightly before using.

250gm passion fruit flesh
100gm sugar
100gm water
100gm cornflour
150gm whipping cream

place passion fruit flesh, water, sugar and cornflour. mix well. cook over low heat till sugar dissolved, stir sauce constantly and bring to boil. cool/chill 
add  passionfruit sauce and whipping cream  . beat light /fluffy. cream /layer pavlova and serve.

with lemon filling
2/3 cup sugar or less
6  tbsp cornflour
1/8 tsp salt
1 1/2  cup water
1 egg yolk
1 tbsp butter
1 tbsp lemon zest
1/2 cup fresh lemon juice
1/2 cup whipping cream

mix sugar n egg yolk. beaten lightly
add in cornstarch flour, salt and water. cook - low heat or double boil till thickened. add in butter and zest of lemon rind. make sure its is not sweet . add in lemon juice. cool- chill .

beat whipping cream and lemon filling till light and fluffy. ready for use

500GM PHILLYDEPHIA CHEESE CREAM
250GM BUTTER
4 X 200GM SALTED CHEESE BISCUIT
2 X 179GM  NESTLE CREAM
1/2 CUP SUGAR
150GM WHIPPING CREAM
150GM FRESH MILK

MIX  CHEESE CREAM, BUTTER AND SUGAR TILL CREAMY . ADD IN NESTLE CREAM, WHIPPING CREAM  AND FRESH MILK. MIXED WELL TILL LIGHT /FLUFFY.

SPREAD CHEESE CREAM IN PAN (ALTERNATIVE : ALUMINIUM FOIL OR USING PLASTIC SHEET )ARRANGE SALTED CHEESE BISCUIT. (REPEAT ON EACH LAYER)
CHILL FOR 2 HOURS OR MORE (PREFERABLE OVERNIGHT)
 
FOR TOPPING:
1/4 CUP COCOA POWDER
1/4 TSP SALT
388G, SWEETENED CONDENSED MILK
125GM BUTTER
CHOPPED ALMOND NUTS
 
MIX COCOA, SALT, CONDENSED MILK AND BUTTER . MELT USING DOUBLE BOIL, CONTINOUSLY STIRRING UNTIL THICKENED. COOL COCOA MIXTURE, POUR INTO CAKES. SPRINKLE WITH CHOPPED NUT.
 
OR U CAN USE GANACHE TOPPING
450GM COOKING CHOCOLATE
300GM WHIPPING CREAM
 
DOUBLE BOIL..COOL SLIGHTLY BEFORE LAYERING THE CAKE. SPRINKLE WITH NUTS

MOIST SOUR CREAM CHOCOLATE CAKE

Makes 9" round

INGREDIENTS:
1 cup Cocoa
1 cup Boiling Water
1 cup Butter - softened
2½ cup Sugar
4 Eggs
2 tsp Vanilla Essence
3 cup Cake Flour*
2 tsp Baking Soda*
1 tsp Baking Powder*
½ tsp Salt* (* sifted together)
1 cup / 8 oz Sour Cream (I used 250g packet)

METHOD:
1. Dissolve cocoa & boiling water.
2. Cream butter & sugar until light.
Add in Vanilla Essence and egg, one a time while beating until well mixed.Fold in flour and sour cream alternately, beating well after each addition.Lastly, add in cocoa mixture.
3. Bake 170C for 1 hour until cooked when tested with skewer..
4. Unmould after 10min and cool completely before slicing then layer/spread with chocolate ganache.

CHOCOLATE GANACHE:
450g Chocolate - chopped
300g Cream
- Place both in a pot & cook small fire until chocolate melt. Cool slightly before layering cake & spreading on top.

BINGKA UBI KAYU

3kg ubi kayu – parut – toskan air nya
(makcik parut lepas itu masukkan kedalam juice extractor machine untuk memerahkan air dengan cepat. Biarkan air nya untuk 1 jam dan ambilkan sagu nya.

2 cawan gula pasir atau lebih jika suka untuk rasa yang lebih manis
2 biji telor
300 gm butter
5 cawan santan (2 cawan santan pekat/ 3 cawan santan cair)
1 sudu teh garam
Pewarna kuning

Caranya:-
Bersih kupas cuci ubi kayu – sagat dan perah air nya dengan kain bersih untuk mengeluarkan lebihan air . biarkan airnya di dalam bekas lain dan biarkan selama sejam untuk mendapatkan sagunya.

Pukul mentega dan gula sehingga kembang. Masukkan telor. pukul sebati. Masukkan ubi kayu berserta sagu nya ,masukkan santan dan garam . Kuar sebati. Masukkan pewarna kuning atau pewarna yang di suka. Bakar didalam Loyang yang telah di griskan selama 1 jam dengan api yang sederhana besar.

Untuk rasa lebih enak..masukkan 2 sudu besar tepung kastad dan susu pekat manis dan kurangkan gula.

WASH MIX FRUIT AND KEEP DRY. MIX WITH BAKING POWDER TILL WELL BLENDED. ADD IN 100GM FLOUR..MIX WELL – KEEP ASIDE


METHOD:-
CREAM (A) TILL LIGHT AND FLUFFY
ADD (B) SLOWLY AND CREAM TILL SMOOTH AND LIGHT
ADD IN © - MIX TILL WELL INCORPORATED ADD IN (D) – MIX WELL
BAKE IN GREASED LINE TIN. BAKE AT 180 DEGREE FOR 1 HOUR.

METHOD:-
CREAM (A) TILL LIGHT AND FLUFFY
ADD (B) AND CREAM TILL LIGHT AND SMOOTH
